French Yogurt Cake with a twist

What do you do when you are upset? Cry? Scream? Drink? Write?

Well, I bake. In all honesty my first choice would be a long drive to nowhere. Nothing like a solo drive to clear your mind, right? However, in US I do not own a luxury of a car, so I bake.

My all-time winner is a French yogurt cake. Cake that was made by French grandmothers and passed down through the generations, is the easiest cake in the world. Even if you are a beginner in the baking word, this recipe will leave your friends impressed. Be prepared for some serious bakery-worth results, even if you aren’t a master baker.

All you need:

  • 11/2 cups all-purpose flour + for dusting
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 3/4 cup sugar
  • 1 tbs grated lemon zest
  • 3/4 cup honey Greek yogurt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 tsp vanilla extract

Preparation:

(Takes 20 mins)

Preheat oven to 180ºC (350ºF). Coat tin wit oil, dust with flour. Top out excess. Whisk 11/2 cups flour, baking powder and salt in a bowl. In different bowl using fingers rub sugar with lemon zest. To sugar add yogurt, oil, eggs and vanilla extract. Whisk to blend. Mix two mixtures together. Pour butter into tin, bake until top of cake is golden brown.

BAKING TIME 50-55 mins

Voilà!

Cake it self is beautifully moist and light crumbed. The classic recipe is plain vanilla, but if you are like me – you find vanilla boring, this is a perfect base for experiments. Give it a makeover!

I’ve tried chocolate, blueberries and rhubarb, sprinkling it heavily with crumble (gives cake extra crunch and texture) and it all worked out beautifully.
